Christmas is such a special time of year when we love to have delicious food around to nibble on and to entertain with. These easy recipes will be tasty and take little of your time so that you can have lots of fun with other chores like decorating and shopping!!

Eggnog Punch

1/2 gal eggnog ice cream
2 quarts eggnog
1 cup Brandy
Nutmeg


Place ice cream punch bowl, pour brandy and eggnog over. Sprinkle nutmeg on top.

Chocolate-Mint Drops

3 cups Basic Cookie Mix
1/4 cup cocoa
3 eggs, beaten
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup mint-chocolate morsels
1/2 cup chopped pecans

Combine first 5 ingedients; mix until blended. Stir in chocolate morsels and pecans. Drop by teaspoonfuls onto lightly greased cookie sheets. Bake 350º for 8-10 mins.

 

Pineapple Puffs

Combine: 8 oz. softened cream cheese
1 medium cool whip
1 small can crushed pineapple (drain)
split: creme puff pastries
Fill with pineapple mixture


Pink Squirrels

1/2 cup Creme de Cacao
1/2 cup Creme de Nuyaux
1 quart vanilla ice cream
Blend (8 servings)

 

Punkin Pie Dip

8 oz. softened cream cheese
2 cups powdered sugar
1 (15 oz.) can pumpkin pie filling
1 tsp. ground cinnamon
1/2 tsp. ground ginger

Beat cream cheese and sugar at medium speed with electric mixer until smooth. Add pie filling, cinnamon and ginger, beating well. Cover and chill 8 hours. Serve with ginger snaps and fresh apple and pear slices.

Now that school is about to begin, here are some ground beef recipes that
are fast, easy, economical and delicious for busy working moms.

Macaroni Beef Bake

1 package macaroni and cheese
1 pound ground beef
2 tbsp. chopped onion
2 tbsp oleo
1 can cream of mushroom soup
1/2 cup milk

Prepare mac and cheese per package directions. Brown beef with onions in oleo and drain.
Stir in soup and milk. In 2 quart casserole, layer 1/2 of mac and cheese and 1/2 beef mixture, repeating layers. Bake at 350 degrees for 25 minutes.


Hobo Dinner

Place a hamburger pattie on a large square of foil, cover the pattie with sliced onion, potato, bell pepper, carrots and tomato. Season with salt,
pepper and a dash of Worcestershire sauce. Seal foil and bake at 350 for 45 minutes. One foil package per person. (Beef may be substituted with pork chop or chicken).

Porcupine Meat Balls

1 pound ground beef
1/2 cup instant rice
1/4 cup chopped onion
1 tsp. salt and dash of pepper
1 can condensed tomato soup
1 soup can water

Preheat oven to 350 degrees. Combine ground beef, rice, onion and seasonings. Shape mixture into 1 1/2 inch balls. Place the balls in a single layer in a shallow 2 quart casserole dish. Combine soup and water
and pour over the meatballs.

Cover and bake 1 hour. (Makes great tomato gravy for instant mashed potatoes.)


Easy Burgers

Shape 1 pound ground beef into four patties. Place into a casserole dish and cover with a 15-ounce can of pork and beans. Cover with foil and bake at 350 for 30 minutes. Drain the beans and serve with
hamburgers. May eat with buns and condiments or just with meat and beans
and a salad.

Pink Pineapple Salad

1 large can crushed pineapple (keep juice)
1 large sugar-free strawberry Jell-O
1 large cool whip
1/2 to 1 cup chopped nuts
2 cups buttermilk

Heat pineapple and juice to boiling. Dissolve jellow in heated pineapple.
Let cool and pour into a large bowl.

Add buttermilk, fold in nuts and Cool Whip and refrigerate to congeal.


No Jell Jell-O Salad

1 small pkg. Jell-O (any Flavor)
1 small can crushed pineapple (drain)
1 small carton cottage cheese
1/2 cup chopped pecans
1 large cool whip

Mix all above ingredients and Refrigerate.
Serve on lettace leaf
Or in small bowls.

Macaroni and Tuna Salad

1 cup cooked macaroni noodles
1 small can tuna
1 cup sliced olives (green or black)
1 bunch green onion, chopped
1 boiled egg, chopped
1 cup mayo (may add more if needed)
Celery seed, salt and pepper

Mix all ingredients and refrigerate. May be served as main dish or a side.


Hot Chicken Salad

2 cups cubed chicken
1 cup finely chopped celery
1/2 cup chopped toasted almonds
2 tsp. Grated onion.
2 tbsp. Lemon juice
1/2 tsp. Salt
1/2 cup mayo

Mix and put in buttered dish.
Top with 1/2 cup grated cheddar cheese
And 1/2 cup crushed potato chips.
Bake at 450 degrees for 10-15 minutes.
